DescriptionThis is quite a heavy-weight Pinot Noir, rich and quite masculine in style which will improve with age. Lovely nose! It would benefit from decanting for an hour or two before enjoying. Concentrated and very good length. Recommended with lamb but should go well with steak/beef and coq au vin! More informationSituated south of the Côte de Beaune, the vines of Couchois are planted on clay-chalk soils on south-facing slopes. Vines were planted here back in the 13th century.
The historians say that in the days before phylloxera vineyards were planted with very high densities and small yields. So Alain Hasard planted young Pinot Noir vines at 12,500 vines per hectare (that's alot!) with grass in-between to aid biodiversity.
There are six hectares altogether and they have been certified organic since 1999 and follow biodynamic priniciples.
The pickers only pick the ripest, healthiest grapes and fermentation takes its course depending on the weather conditions at vintage time. Maceration takes around 6 to 10 days, enough to get the best expression of Pinot Noir fruit whilst preserving finesse and elegance. The fermented grapes are then pressed very gently in the old basket press (see picture) and the wine flows out by gravity (no pumping). The percentage of new oak used is quite high and bottling is done without any fining or filtration. This is very natural wine!
