Description

Made from 90% Garganega and 10% Trebbiano, gently pressed. The bouquet is intense and reminiscent of grilled, salted almonds (which makes it ideal as an apéritif!). One of the lovely things about this wine is also the full, mouthwatering texture and lovely lingering flavour. Highly recommended! Unfined so suitable for vegetarians and vegans.

There is Soave and Soave. Most Soave is fairly neutral tasting, but Pieropan are the Kings of Soave and their wines are fantastic.

Based just outside Verona on volcanic soils, the estate was established in 1890 by Dr. Leonildo Pieropan. It is now run by his grandson Leonildo who attaches enormous importance to the vineyards themselves as a way of achieving the high quality which characterises his wines.

Nino’s vineyard husbandry is also innovative for the region and includes spur spruning, crop thinning and the use of organic fertilizers. In addition, he studies and helps preserve endangered varieties of grape and continues to fight for recognition for the Garganega grape.

Towards the end of September, the healthy, ripe grapes are harvested by hand, usually in more than one session, to ensure that they have reached their optimum level of ripeness.

The grapes are collected in 300kg boxes and taken to the winery every two to three hours. Using pneumatic presses the juice is gently separated from the skins. The must is left to rest for a couple of days at low temperature and than is racked and moved into temperature controlled cement vats where a very slow fermentation takes place, at a temperature of 20 degrees.
